Brioche Cheese Burgers with Bacon Chilli Jam

Ingredients (Serves 4)

4 St Pierre Brioche Burger Buns
4 Beef Patties
1 tablespoon extra virgin olive oil, plus extra for brushing
8 slices streaky bacon
200g mozzarella cheese, cut into 8 slices
1/4 cup whole-egg mayonnaise
1 cup arugula (rocket)
4 dill pickles, halved
Cracked black pepper

Bacon Chilli jam:
1 tablespoon extra virgin olive oil
200g streaky bacon finely chopped
1 small brown onion, finely chopped
2 cloves garlic, crushed
1/2 teaspoon dried chilli flakes
2 tablespoons wholegrain mustard
1/4 cup maple syrup
1 tablespoon brown sugar
250g cherry tomatoes, quartered
2 tablespoons bourbon
1/4 cup malt vinegar

How to Make

To make the bacon chilli jam, heat the oil in a large frying pan over high heat. Add the bacon, onion and garlic and cook for 6 - 8 minutes, stirring occasionally, or until golden. Add the chilli, mustard, maple syrup, sugar and tomato, reduce the heat to medium and cook for 8 minutes or until thickened. Add the bourbon and vinegar and cook for a further 2 minutes. Set aside to cool. Heat the oil in a large frying pan over high heat. Cook the bacon for 2 - 3 minutes each side or until crisp. Set aside and keep warm. Wipe out the pan with a paper towel. Brush the beef patties with oil and cook for 3 minutes. Turn each patty over, top each with 2 slices of the cheese, reduce heat to medium and cook for a further 2 minutes or until just cooked through and the cheese has melted. Spread the base of each bun with the mayonnaise and top with the arugula, patties, bacon chilli jam, pickle and bacon. Sprinkle with pepper and top with the remaining bun halves to serve.
