
Candied Sweet Potato Burgers

These sweet potato burgers are a great Halloween dessert with gooey toasted marshmallows and warming autumnal flavors.
Ingredients
- 1 pack St Pierre Brioche Burger Buns
- 2 sweet potatoes, peeled
- 3 tbsp butter
- 1 tsp cinnamon
- 1 tsp ground nutmeg
- 1 tsp ground ginger
- 3 tbsp brown sugar
- 2 tbsp maple syrup
- Big marshmallows
Method
- Preheat the oven to 400°F/Gas Mark 6
- Chop the sweet potato into 1 inch chunks and place in an ovenproof baking dish
- Add the butter to a pan with the cinnamon, nutmeg, ginger, sugar and 1 tbsp maple syrup
- Stir over a gentle heat until the butter has melted and the sugar has dissolved. Pour over the sweet potatoes in the dish and mix well
- Cover the dish with foil and cook in the oven for about 20 minutes. When the potatoes are tender, remove the foil and add the marshmallows
- Return to the oven and cook for another few minutes until the marshmallows are starting to turn golden brown. Remove from the oven and set the dish aside for a few minutes
- Using a large serving spoon or spatula, layer the marshmallow-topped sweet potatoes onto the bases of the brioche burger buns, add another drizzle of maple syrup then add the lids and serve
