With spring just around the corner, what better way to celebrate the sun shining than with a spot of al fresco dining with friends? If you fancy a light but delicious alternative to the standard burger, our Crab Cake Brioche Sliders are a perfect addition to any lunch time soiree, and are so simple to make. Check out our quick and easy recipe below and get ready to wow your friends – the only trouble is they’ll expect you to host every week!

Ingredients (serves 8)

  • 8 St Pierre Brioche Rolls
  • 6 tablespoons of mayonnaise
  • 1 large egg
  • 1 teaspoon of Old Bay seasoning
  • 1 teaspoon Worcestershire Sauce
  • Salt
  • 2 tablespoons unsalted butter, melted for brushing
  • 1lb of crabmeat
  • 6 strips of bacon
  • Finely grated zest of one 1 lemon
  • Freshly ground pepper
  • Diced red onion
  • Sliced tomatoes and lettuce leaves for topping
  • Pickles for serving


  1. Tear two brioche rolls into small pieces and put into a bowl
  2. Whisk two tablespoons of mayonnaise, egg, Old Bay seasoning, Worcestershire Sauce, mustard and ¼ teaspoon of salt in another bowl
  3. Add the mayonnaise mixture to the brioche pieces, stir to combine and let it sit for 10 minutes before gently folding in the crab meat
  4. Brush a baking sheet with melted butter
  5. Tightly pack the crab mixture into six small patties (oval shaped) and arrange on a baking sheet
  6. Refrigerate for at least one hour or overnight
  7. When ready to serve cook the bacon until golden and slightly crisp
  8. Allow to cool and break into halves
  9. Combine the remaining mayonnaise, lemon zest and diced red onion
  10. Season with salt and pepper
  11. Preheat the grill and arrange the brioche rolls cut side up on a baking sheet
  12. Brush with butter and grill until golden
  13. Transfer the crab cakes to the grill and cook, rotating as needed for about six minutes, until golden and warmed through
  14. Spread the rolls with some of the mayonnaise
  15. Serve the crab cakes on the buns with tomatoes, lettuce and bacon. Serve with pickles.
