  • 4 slices St Pierre Brioche Sliced Loaf
  • 2 tsp butter
  • 2 tsp vegetable oil
  • Fresh sage leaves (optional)
  • Leftover turkey, shredded or sliced, about 4 ounces
  • 4 oz brie, sliced
  • 4 tsp cranberry sauce, plus extra to serve
  • Few fresh rosemary leaves, chopped
Method
  1. Heat 1 tsp butter and 1 tsp oil in a large non-stick skillet over a medium heat
  2. Add the sage leaves and sizzle for a minute until crispy. Carefully remove from the pan and set aside
  3. Make two sandwiches by layering the turkey, brie and cranberry sauce on 2 of the slices of bread
  4. Add the chopped rosemary and top with the other 2 slices
  5. Add the rest of the butter and oil to the skillet and fry the sandwiches gently for a few minutes on each side until the bread is golden and the cheese is melting
  6. Sprinkle over the crispy sage leaves and serve
