Leftover Grilled Ham & Cheese Sandwiches

Take your ham and cheese sandwiches up a notch this Christmas using your leftover ham to create these indulgent Grilled Ham & Cheese Toastie. Grilling the ham in a ginger and orange glaze for extra festive flavor, these sandwiches will make your festive leftovers magnifique in very little time using our versatile Brioche Loaf.
Ingredients
- 4 slices St Pierre Brioche Loaf
- 1.5 cup cheddar, grated
- 1 spring onion, thinly sliced
- Few rosemary leaves
- 1 tsp oil
- 1 tsp butter
For the grilled ham
- 35 oz thick cut ham*
- 1 red onion, cut into quarters
- 2 cloves garlic, unpeeled and smashed
- 1-2 inches piece fresh ginger, peeled and grated
- 1 tbsp butter
- 1 tbsp chopped rosemary leaves
- 1 orange, zested then juiced
- 2 tbsp honey
- 1 orange, sliced
Method
To make the grilled ham
- Preheat the oven to 375°F
- First place the ham in a large pan of cold water so that it is just covered. Bring to a simmer then turn off the heat
- Carefully transfer the ham to a grilling tin and trim off any excess fat on the top (but leave a thin layer of fat as this helps to stop the meat from drying out). Throw away the cooking water. Tuck the onion and garlic around the base of the ham
- Mix together the ginger, butter, chopped rosemary and orange zest and rub all over the top and sides of the ham. Cover with foil and seal around the edges of the tray. Grilled in the oven for 50 minutes
- Meanwhile mix together the honey and orange juice
- After 50 minutes, remove the foil and drizzle over the honey and orange juice mixture. Add the sliced of orange on top and return to the oven, uncovered for another half an hour. Rest for 10 minutes before slicing. Remember to leave some leftovers for sandwiches the next day!
To make the toasted sandwiches
- To make the toasted sandwiches, divide half the grated cheese between two slices of brioche then sprinkle over the spring onions and a few rosemary leaves. Add a few chunky slices of the leftover grilled ham and top with the remaining cheese and slices of brioche
- Heat a non-stick frying pan over medium heat then add the oil and butter. Add the sandwiches and fry gently for a few minutes until the cheese is starting to melt and the brioche has turned golden brown. Carefully turn the sandwiches and cook for another couple of minutes on the other side before serving

*You can use sliced of thick-cut grilled ham for this instead if you don’t have any leftover raw ham
