
New York Deli Style Burgers
Parisian cafés meet New York delis, and the result is a delicious recipe with golden St Pierre Brioche Buns, smoky pastrami and crunchy gherkin, a true trans-atlantic treat.
Ingredients
4 St Pierre Brioche Burger Buns
550g good quality beef mince
Pinch sea salt and black pepper
½ tsp mustard, optional
½ tsp dried parsley (or use finely chopped fresh parsley)
3-4 tbs burger sauce
Shredded iceberg or gem lettuce
4 slices swiss cheese such as Emmental
8 thin slices pastrami or salt beef
Gherkins
4 tbs sauerkraut
Fries to serve
Method
- Make the burgers – put the minced beef into a bowl, season well salt and pepper and add the dried (or fresh) parsley and mustard. Using clean hands, mix everything together then divide the mix into 4. Shape into patties, each slightly wider than the buns (as the burgers will shrink slightly when they cook) and place on a large plate or board. Pop the fries in the oven if using
- Fry the burgers over medium high heat for about 5 minutes on each side, pressing them down slightly as they cook to keep their shape. Check they’re cooked then turn off the heat and add a slice of cheese to each burger while still in the warm pan
- Lightly toast the buns if you like then spread some burger sauce over the base of each one. Add some shredded lettuce then place the burgers on top
- Arrange the pastrami slices in loose folds over the burgers then top with some sliced pickled gherkins and a spoonful of sauerkraut. Serve with fries on the side
