Berry & Lemon Curd Brioche Butter Pudding

Ingredients
Serves 6 - 8

St Pierre 500g brioche loaf
Softened butter for spreading
500g shop bought custard
300ml whipping cream
150g raspberries and strawberries
100g blueberries
6 tablespoons lemon curd
Whipping cream to serve if liked

How to make

Preheat the oven to 160C / Fan 140C or gas mark 3. Butter one side of each slice of brioche. Cut each slice into half diagonally to form triangles and layer in an oven proof dish. Mix the custard with the cream, then pour in and around the brioche triangles, pressing the brioche down gently.

Leave to stand and absorb for 20-30 minutes. Scatter the pudding with the berries, tucking them between the brioche,
slices, then drizzle and dollop with lemon curd. Bake for 40-50 minutes. Leave to stand for 10 minutes before serving (with extra cream if you like).
