Japanese Style Fruit Sandwiches

Tokyo meets Paris in every bite of these sweet and unique brioche fruit sandwiches. A bright and colourful alternative to cake, made “magnifique” with our Brioche loaf.

  • 6 slices St Pierre Brioche loaf
  • 1 x 300ml pot whipping cream
  • 4-5 tbs icing sugar
  • Handful strawberries
  • 1 or 2 clementines or satsumas
  • 1 kiwi fruit


  1. Wash the fruit then dry on kitchen paper. Remove the tops of the strawberries and cut any large ones in half. Peel and divide the satsumas into segments. Peel and cut the kiwi into 4 lengthways
  2. Whip the cream, icing sugar and vanilla extract in a large bowl
  3. Spread half the cream over three slices of the brioche then arrange the fruit on top, thinking about the position of the pieces when you cut the bread
  4. Add the rest of the cream then the other slices of brioche. Press lightly to sandwich together. Wrap in foil and pop in the freezer for half an hour to an hour to make them easier to cut
  5. Unwrap the sandwiches then cut in half using a sharp knife. Carefully clean the blade with kitchen paper between each cut so as not to smudge cream onto the fruit
